I often skip breakfast when I’m at home, but when I feel like a little something, don’t have much time, and want to avoid a sugar crash later, this is a great low carb keto breakfast combo. 
 
My zero-sugar Cafe Mocha dupe is absolutely delish, and gives me plenty of dark chocolately protein to keep going without a sugar crash. And the blueberry mug cake is something I don’t just have for brekkie, I’ll often have it as a late-night snack. And who doesn’t like whipped cream first thing in the morning? It def puts me in a good “treat yourself” mood to kickstart the day. 
 
I’m not kidding – once you have the base for this mug cake down, you can change up the mix-ins to your heart’s desire – whether it’s double chocolate, matcha, PB&J, or whatever other combo you can come up with, it should work beautifully; and if you’re not trying to do any low-carb / low-sugar cooking, you can always substitute the almond flour with regular flour (though I would add a 1/2 tsp of baking powder if you’re using regular all-purpose flour).

Ingredients

No Sugar Café Mocha 

  • Dark roast coffee 
  • 1 Atkins Dark Chocolate Royale protein shake 

Low Carb Blueberry Mug Cake 

  • 2 Tblsp Almond flour 
  • ½ Tblsp Coconut flour 
  • 1 Egg 
  • Sugar or sugar substitute 
  • Berries of your choice 
  • Whipped cream 

Directions

For No Sugar Café Mocha 

Prepare a dark roast coffee using the method you prefer. I’m a Keurig user, but you can totally make this in a regular coffee pot, French press, or percolator.

Add half of a pre-made Dark Chocolate Royale Atkins shake.

For Low Carb Blueberry Mug Cake 

In a microwaveable mug, add 2 tblsp almond flour and 1/2 tblsp coconut flour. A higher-side coffee mug works better than a flatter / wider coffee mug.

Mix one egg directly in the mug.

Add one or two packets of sugar substitute, and mix some more.

Fold a handful of blueberries (or berries of your choice) into the muffin batter so everything is well coated.

Put mug into the microwave and cook for 60 – 90 seconds (depends on the strength of your microwave).

Turn muffin out onto a plate, add fresh blueberries, and top with whipped cream…and enjoy!
